As a young apprentice, Chef Carmelo immersed himself in the kitchens and culture of Tuscany, falling in love with its romantic heart and its flavours - house made olive oils and red wines, meat and game, salumi, pecorino and Siena's famous sweets.
Throughout June, Cipri is celebrating the flavours and specialities of Tuscany with menus featuring dishes such as Ribollita soup, Tuscan Liver Patι, Artisan pasta with Wild Boar Ragu, Bistecca Fiorentina, Cacciucco Livornese fish soup, Panforte di Siena.

This July at Cipri Italian, we bring back Festa del Maiale - the celebration of the pig. Traditionally, this festa marks the annual family making of prosciutto, sausages, and other cured pork delicacies.
At Cipri Italian, it marks a month of tasty food and wine, with treats such as grilled sausage, housemade salumi, prosciutto, pasta with pork ragu and roasted suckling pig from our woodfired oven.

Cipri Italian are hosting an authentic, hands on workshop in the art of salami making. Join us in an intimate group at our family homestead in North Richmond for a unique grassroots cultural experience. The sessions are ideal for both first time makers and those looking to hone their existing skills.
Experienced instructors will teach you in the old school methods of salami making and curing. Enjoy morning espresso on arrival, salami making and a bonus cooking demonstration, along with a porchetta straight from the wood fired oven.
At the end of the day you will take home your own hand made salami.
